Quick Affordable Recipes for a Hot Summer

Discover budget-friendly and straightforward recipes perfect for the scorching summer. Each recipe has been tried and tested, earning its place as a beloved favorite in our family.

Sauces

Best Garlic Butter in the World

Undoubtedly, this garlic butter stands out as the finest in the world. How do I know? Well, my friend, who served as a personal chef for Michael Caine and clinched the title of the world’s best garlic butter in France a few years back, took a couple of years before finally revealing this remarkable recipe to me. So, give it a try!

4 table spoons of fresh crushed garlic (very fine)
2 Table spoon of lemon juice
1 Table spoon of Aromat
1 Egg

(Alternatively, you can enhance it by incorporating parsley.)

In a container mix all together – This technique is highly effective for oven-baked fish, garlic bread, and more. The egg acts as a seal, trapping the flavors within the baked fish, ultimately yielding the finest oven-baked fish you’ll ever experience.

Famous Pink Sauce

This sauce is so easy to make, taste better than traditional pink sauce and very affordable. It can be used on salads, burgers, fish and chips. (And Yes, this is exactly what you think it is!)

1 Tin Condenced Milk
1 Tin Mayonaise
3/4 Table Spoons of Fanta Orange

Mix togheter and make sure to add one table spoon Fanta at a time (You don’t want it to taste to sweet)

Best Hot Sauce

Once again we have a famous Hot sauce (and I mean Hot!)

Two handsful red and green chillies
1 table spoon of paprika
2 table spoons of cayenne pepper
1 table spoon of salt
2 table spoons of garlic powder
2 table spoons of lemon juice
2 table spoons of apple vinegar
16 table spoons of olive oil

Blend all together and start using. This is the best chillie sauce you will ever make. If you don’t want it to be extra hot you can reduce the amount of chillies and add another table spoon of lemon juice.

Pumpkin Cakes

This delicious recipe we make at least twice a month. It goes well with braai or Sunday lunch. (Winter or Summer)

Cook enough pumkin or butternut so that you have two full cups

1 Cup of Flower (bread or cake)
10 ml Baking power
1 Teaspoon salt
1 Egg

Mash the pumkin in bowl and add the rest of the ingredients. Mix well and fry in a pan with oil (the pan should have about 1cm of oil in it.

Sprinkle some cinnamon sugar, honey or topping or your choice.

Wraps, Tortilla’s and Roti’s

Tortillas (No yeast and delicious) Extremely Easy

This is one of my favorite recipes – This dough can be used for pizza base and roti’s

2 Cup Flours (Bread or Cake)
1 Cup warm Water
Salt

In a bowl mix together and knee for about two minutes.
Cut in 10 pieces
Roll out in circle and about 4mm in thickness
Fry in pan with no oil for about a minute a side

You can place two Tortillas on top of each other with your favorite filling like chicken mayonaise, tuna and diced onion or even ham and cheese. This will then be called a quesadilla

Rotis

2 Cup Flours (Bread or Cake)
1 Cup warm Water
Butter or Margarine
Salt

In a bowl mix together and knee for about two minutes.
Cut in 8 pieces
Roll out in circle and about 3mm thickness
Fry in pan with no oil for about a minute a side
Spread butter on one side after frying

This will be soft and tasty – You can use fillings like lamb curry, chicken etc.

Vetkoek

This is so easy to make and the best part is that you can buy a bag of pre-made bread dough at Checkers or Pick ‘n Pay. (I still think it is worth mentioning that this is super easy, affordable and very tasty)

1 Bag of pre-made bread dough
Break in even pieces and fry in a pan with about 20cm of oil

You can use filling like curry mince, jam and cheese or my favorite, bacon, egg and cheese
